Cinnamon Roll Cake


Sometimes you just need a cinnamon roll. It happens. The challenge is that if you're making them at home you have to wait for the dough to rise, and it will be a few hours before you can get to the important task of eating them. Sure, you could put on some pants, go to the store, and buy some. But let's be honest, they are never as good as you hope for, and you end up ever so slightly disappointed. Well my friends, I have a solution. This recipe is perfect for fulfilling the desire for that warm, sticky, buttery goodness we crave and it only takes about 30 minutes to bake. Oh happy day! Technically it is cake but if you wanted to eat some for breakfast, I won't tell. This recipe includes substitutions to make this cake vegan. I've made it both ways and it turns out wonderful either way. Love and blessings from my kitchen to yours.


  • 3 cups of flour
  • 1/4 teaspoon salt
  • 4 teaspoons aluminum free baking powder
  • 1 cup organic sugar
  • 1 1/2 cups milk ---vegan substitute: cashew milk
  • 2 eggs---vegan substitute: *flaxseed eggs (recipe below)
  • 2 teaspoons vanilla
  • 4 tablespoons butter, melted---vegan substitute: Earth Balance buttery sticks
  • 2 sticks (1 cup) butter, softened---vegan substitute: Earth Balance buttery sticks
  • 1 cup brown sugar
  • 1 tablespoon cinnamon
  • 1/2 cup chopped pecans (optional)


  • 2 cups powdered sugar
  • 5 tablespoons milk---vegan substitute: cashew milk
  • 1 teaspoon vanilla

*For 1 egg; mix 1 tablespoon ground flaxseed with 3 tablespoons of water and let sit for a few minutes before adding.

Pre-heat oven to 350 F. Sift together flour, salt, and baking soda. IMG_1194Add sugar, milk, eggs, and vanilla. Once well combined, stir in the 4 tablespoons of melted butter. Pour cake batter into a greased 9X13 baking dish.

In a stand up mixer (you could also use a hand mixer) add the 2 sticks of softened butter, brown sugar, cinnamon, and nuts.



Mix until well combined. Drop evenly in the cake batter by spoonfuls. Use a butter knife to swirl evenly through the cake.



Bake for 30-35 minutes or until a toothpick comes out clean. Enjoy it warm or cool!
